Who doesn’t love a good brownie? About five years ago I posted 2 versions of raw vegan brownie recipe that is still one of my all time favourites. I’ve updated that recipe to include super foods and protein to create the ultimate no-bake, raw, vegan, paleo brownie that is bursting with nutrition!!! My kinda treat (it means that I can eat double haha). They’re not just healthy though, they’re soooo yummy and satisfying!

Ok now how about that brownie recipe that I promised!!
No Bake Superfood Brownies
Raw – Vegan – Paleo – Gluten Free
1 cup almonds
1/2 cup shredded coconut
1/3 cup cacao powder
3 tablespoons protein powder of choice
1 tablespoons super food powders of choice*
1/8 teaspoon Himalayan salt
1 cup pitted, packed dates (chopped if firm)
1 1/2 – 2 1/2 tablespoons water
Finely grind the almonds and coconut in a food processor. Add the cacao, protein, super food powders, and salt. Process just to combine. Add the dates and 1 1/2 tablespoons of water. Process the mixture until the dates are completely broken down and combined. Add more water, as needed, for a moist dough that easily holds together when pressed in your hand. Press the dough into an 8×8″ pan (no need to grease). Set aside.
*I used a combination of maca, lucuma, reishi, ashwaghanda, and mesquite. You can use one or a blend. 1 tablespoon might not seem like much but these powders are very concentrated so a little goes a long way.
1/3 cup melted coconut butter
1/3 cup maple syrup
1/3 cup + 1 tablespoon warm water
1/4 cup melted coconut oil
1/4 cup cacao powder
1/2 teaspoon vanilla extract
Blend all ingredients until smooth and creamy in a blender. The mixture will be liquidy – don’t worry, it will firm up into a thick, luscious, creamy frosting. Pour it over the brownies. Place into the freezer for 3-6 hours and then transfer it to the fridge to continue to firm up, another few hours.
Coconut Superfood Drizzle
1 1/2 tablespoons warm water
1 tablespoon melted coconut butter
1/2 tablespoon raw cashew butter (or tahini)
1 teaspoon maple syrup
1 teaspoon melted coconut oil
1 teaspoon lucuma powder
1/2 teaspoon maca powder
Whisk all ingredients until smooth in a small bowl. Pour over the chilled frosting. Slice the brownies into 16 squares. Sprinkle with chopped cashews if desired.
These brownies store beautifully in the freezer for a few months or keep in the fridge for up to 10 days.
